Morning lovelies! Today on the blog I am sharing one of my favorite breakfasts, eggs & arugula. I am an absolute sucker for poached eggs, and try out new methods whenever I can. For this recipe I used my Nordic Ware microwave egg poacher (link below). This is perfect for me, especially when I am having a busy morning and need to make some quick poached eggs on the run, which I know my husband will also enjoy. Together with this I add a whole grain English muffin with avocado, arugula (which some of you may know as “rocket”), and a squeeze of lemon as always! Season with pink Himalayan sea salt & pepper to taste. As a refreshing drink I paired this delicious breakfast with some blackberry infused water, just to finish it all off.
