Hello lovelies! This week I got to try out the amazing ready-to-eat meals from The Meal Tree, and today on the blog I thought I would share all about it! Running a company full-time definitely keeps me crazy busy and although I love cooking, I just haven’t been able to find the time lately. I am always searching for ways to improvise and save time, so I have to say Meal Tree has been a lifesaver!

It is super easy to order from The Meal Tree, especially with their brand new website. There you can access their full menus, which is a core menu as well as a seasonal menu. You can either pick the Recurring Order, the Easy Order, or simply pick a meal from the menu. California Bento Bowl

The meals come prepared and delivered in an amazing freezer bag, which is great to use again. For my first lunch I ordered the California Bento Bowl and man, was it ever tasty! It was literally exactly what I envisioned, and I secretly wish I had ordered one for every single day of the week. SO good!! Everything is so flavorful, and the mango sauce is incredible! So fresh, and the perfect pairing with the bowl.

Apple & Sage Tenderloin

For dinner I had the Apple & Sage Tenderloin, which included baby potatoes, roasted veggies with mashed apple to compliment. Those roasted peppers were to die for! It was literally so easy to heat up, and plate to perfection and I was back to work in no time. The best part is that your meals can be adapted to your preferences, including vegetarian and vegan options!

Salmon Dijon

On day two I chose the Salmon Dijon because lately salmon has been my go-to lunch. It is perfect on a bit of quinoa or even on a salad! Okay, so can I just stop here for a second – this cranberry almond quinoa that came with the salmon had me stuffing my face! Absolutely soooo good. Definitely a winner, and the whole combo was just so flavorful, you wouldn’t even believe.

Alberta Smoked Brisket

Finally, for my last dinner, I thought I would end it off with the Alberta Smoked Brisket. The brisket is a local smoked Alberta brisket, paired with grilled asparagus and some zesty mashed yam. Again, the flavors were incredible and I definitely loved the mashed yam. Big thumbs up!

Hello lovelies, and happy Monday to you all! As many of you may know, breakfast is one of my favorite meals, ever :D Lately I have been working hard to heal my gut and make it happy again. This meant cutting out dairy, wheat, and even eggs! This is definitely a big change for me, since those are my favorite components of a yummy breakfast!! No more eggs Benny, and no more yummy greek yogurt granola bowls for a while!

Now since I am not so in tune with all the amazing alternatives that a vegan lifestyle has to offer, I really had to do a little digging to reinvent some of my all-time breakfast favorites. Today I want to share my version of a dairy-free, gluten free yogurt bowl option. It’s delicious, nutritious, and there are a few tricks to get a bit of extra protein added to boot!

All you’ll need is your favorite flavor of Daiya greek yogurt alternative, top it with some berries, sliced banana, pumpkin seeds, and dried cranberries. Next, I added some gluten free PURE Granola – the apricots and seeds flavor! Go ahead and add a little bit of your favorite nut butter as well for a little treat. Finally, I added half a Luna Bar to give the bowl a little extra protein kick. What are you favorite breakfast bowls? <3

Hello Lovelies! Yesterday my company, We Edit Podcasts, turned 2! So today I thought it only right to celebrate with a crazy sweet, chocolatey, peanut butter cheesecake! I can’t believe two years have gone by since starting my business, and I couldn’t be more excited about how it has grown. Although I prefer a healthy diet, amazing times like these call for a little extra sweet treat!!

Starting and growing a business is no small feat. It takes many long days, late nights, and plenty of hours of hard work to get it off the ground. You have to be able to make the sale, deliver a great product or service, and most importantly, add value into the lives of your clients. It is so important to always follow through, be consistent, and put in the hard work from the start to truly reap the rewards in the end.

Launching your business can seem like a mountain to climb, but it is all about setting milestones for yourself and celebrating each when you get there so you can look on to the future. When tough times come, there is no use in staying stuck where you are. Look forward, pivot, and make your next move! Most of all, value the dedication and work that you’ve put in because without you it wouldn’t have been possible. So don’t undervalue yourself, don’t sell yourself short, and always celebrate how far you’ve come!

Now on to that cheesecake! :D

All you’ll need is:

10 graham crackers
7 tablespoons of melted butter
24 ounces cream cheese (3 packs)
1½ cups powdered/icing sugar
1 teaspoon vanilla extract
1½ cups chocolate chips, melted
2 cups peanut butter, melted
1 cup confectioner’s/icing sugar

Crush the graham crackers, then melt the butter and add the two together to form the crust. Press the crust into the bottom of a springform pan and refrigerate. Mix the softened cream cheese in a large bowl, and add in the powdered sugar & vanilla, mix until smooth. Melt the chocolate and add to the cream cheese mixture. Pour mixture over the graham cracker crust using a spatula to smooth it out, and refrigerate.

Mix together the melted peanut butter and icing sugar and pour over the chocolate cheesecake layer. Use a knife to spread evenly and refrigerate for 2-4 hours. Top with your favorite toppings, and decorate it with some beautiful flowers :) Enjoy loves! How are you celebrating your big milestones? <3

Hello Lovelies! Today I thought I’d get a delicious recipe on the blog for you. These eggplant burgers are amazzzzing! As some of you may know, I love spending time in the kitchen trying out new recipes and getting some yummy meals on the table. I have cooked with eggplant quite a bit, usually for eggplant pasta or a Moussaka Greek dish (which is to die for!). I saw this recipe back when I was doing the Whole30 diet and thought it was a great option to carry into your regular eating, even after finishing the Whole30.

The trick with eggplant is to really get a nice roast on them. *Tip: heat the baking sheet in the oven ahead of time to give them an extra crisp. For this recipe I also made my own burger patties so that they would be small enough to fit on the eggplant rounds. Obviously it helps to buy the fat eggplants so that there is more “bun” to go around :)

RECIPE:
1 eggplant
3 tablespoons of extra virgin olive oil (EVOO)
½ teaspoon salt
½ teaspoon pepper

Preheat the oven to 425°F and line a baking sheet with foil or parchment paper. Slice the eggplant evenly into quarter-inch-thick rounds and arrange in a single layer on the baking sheet.
Drizzle half of the olive oil evenly over the eggplant, then flip each slice and drizzle the remaining EVOO on the other side. Season with the salt and pepper.

Roast the eggplant in the oven for 20 minutes, until it is browned on the outside and tender when poked with a fork. Allow the eggplant to cool, then make your burger with all the fillings between two slices and serve.
