Classic Gibson’s Fish & Chips

Food, Recipes

Hello Loves! Is anyone else out there a huge fan of some classic fish & chips take-out? One of my favorite memories as a kid is driving out to Hout Bay to the Mariners Wharf to get fish & chips takeout, and sit on the deck overlooking the boats in the harbor! So now, whenever we get the chance we love having a little fish & chips picnic, even if it’s in the middle of the Prairies :)

We always go for the classic fish & chips combo from a cute little place called Gibson’s Fish & Chips in Saskatoon. They always prep their takeout packages in newspaper, tied together with a string. Absolutely love, love the authentic details! Not to mention, the food is amazing. Reminds me so much of being in London, stopping for fish & chips on the street after a long day of being “tourists” – which is another one of my favorite things to do. Mind you, I love being a tourist in my home countries as well. Life is absolutely more fun that way! What are some of your favorite memories? <3

Save Time & Eat Well With The Meal Tree!

Food, Lifestyle, Recipes

Hello lovelies! This week I got to try out the amazing ready-to-eat meals from The Meal Tree, and today on the blog I thought I would share all about it! Running a company full-time definitely keeps me crazy busy and although I love cooking, I just haven’t been able to find the time lately. I am always searching for ways to improvise and save time, so I have to say Meal Tree has been a lifesaver!

It is super easy to order from The Meal Tree, especially with their brand new website. There you can access their full menus, which is a core menu as well as a seasonal menu. You can either pick the Recurring Order, the Easy Order, or simply pick a meal from the menu. The best of all is they deliver either on a Monday or a Thursday, so you are covered with delicious ready-to-eat meals all week long!

California Bento Bowl

The meals come prepared and delivered in an amazing freezer bag, which is great to use again. For my first lunch I ordered the California Bento Bowl and man, was it ever tasty! It was literally exactly what I envisioned, and I secretly wish I had ordered one for every single day of the week. SO good!! Everything is so flavorful, and the mango sauce is incredible! So fresh, and the perfect pairing with the bowl.

Apple & Sage Tenderloin

For dinner I had the Apple & Sage Tenderloin, which included baby potatoes, roasted veggies with mashed apple to compliment. Those roasted peppers were to die for! It was literally so easy to heat up, and plate to perfection and I was back to work in no time. The best part is that your meals can be adapted to your preferences, including vegetarian and vegan options!

Salmon Dijon

On day two I chose the Salmon Dijon because lately salmon has been my go-to lunch. It is perfect on a bit of quinoa or even on a salad! Okay, so can I just stop here for a second – this cranberry almond quinoa that came with the salmon had me stuffing my face! Absolutely soooo good. Definitely a winner, and the whole combo was just so flavorful, you wouldn’t even believe.

Alberta Smoked Brisket

Finally, for my last dinner, I thought I would end it off with the Alberta Smoked Brisket. The brisket is a local smoked Alberta brisket, paired with grilled asparagus and some zesty mashed yam. Again, the flavors were incredible and I definitely loved the mashed yam. Big thumbs up!

So impressed by The Meal Tree and they are just an incredible team working hard to deliver quality products, and give you back your precious time! Best of all? I have an amazing DISCOUNT CODE for you all! If you are looking to get some of these incredible meals delivered, just use the code “Carli10″ to get 10% off your first order! Let me know what you chose from the menu, and what you thought of the meals. Have fun picking! <3

Morning Glow Yogurt Bowl

Food, Recipes

Hello lovelies, and happy Monday to you all! As many of you may know, breakfast is one of my favorite meals, ever :D Lately I have been working hard to heal my gut and make it happy again. This meant cutting out dairy, wheat, and even eggs! This is definitely a big change for me, since those are my favorite components of a yummy breakfast!! No more eggs Benny, and no more yummy greek yogurt granola bowls for a while!

Now since I am not so in tune with all the amazing alternatives that a vegan lifestyle has to offer, I really had to do a little digging to reinvent some of my all-time breakfast favorites. Today I want to share my version of a dairy-free, gluten free yogurt bowl option. It’s delicious, nutritious, and there are a few tricks to get a bit of extra protein added to boot!

All you’ll need is your favorite flavor of Daiya greek yogurt alternative, top it with some berries, sliced banana, pumpkin seeds, and dried cranberries. Next, I added some gluten free PURE Granola – the apricots and seeds flavor! Go ahead and add a little bit of your favorite nut butter as well for a little treat. Finally, I added half a Luna Bar to give the bowl a little extra protein kick. What are you favorite breakfast bowls? <3

Staying Energized Naturally With PilotsFriend

Food, Recipes

Hello Lovelies! Happy Wednesday to you all :) So as some of you might know, running your own business takes hard work, sacrifice, and a lot of extra hours behind a desk. This requires energy and motivation to get it done. The last month I was so excited to discover PilotsFriend, a natural fruit tonic energy drink made with all the good stuff! It was crafted in Italy by scientists and nutritionists for active duty fighter pilots – amazing!

PilotsFriend is great for a mid-morning or afternoon burst of energy without the crash that comes with traditionally caffeinated drinks. The amazing ingredients like lemon, chokeberries, ginger and cardamom are great for helping with good digestion. PilotsFriend is a perfect substitute for your regular afternoon coffee, and is a delicious refresher! It has no artificial sweeteners, it’s vegan & non-GMO, with a natural caffeine derived from cola nuts and Guarana seeds.

The cans are so cute, and totally on-brand! Am I right?! They come with a handy little cap so you can save it for later, which is perfect for me because I can never drink a full can of anything in one sitting :P It has a great natural taste, but definitely not what you would expect from an energy drink! Super refreshing, and something I have been reaching for instead of adding anymore coffee to my day.

So often, we get to those times in the week or maybe the day when you hit that slump and think you’d rather just stay at home and catch a breather. Whether it is going to the gym, getting out to a networking event, or even just seeing old friends, sometimes even when you are tired you just have to get up and do it anyways! For me, that’s when I make the biggest breakthroughs. I get a new perspective and a whole new experience that I never would have had otherwise.

“No matter how you feel, get up, dress up, and show up.” – Regina Brett

There is always something to be learned on the other side, so find a way to be inspired, get a renewed energy, and attach every day with purpose! <3

We Edit Podcasts Turns 2!

Food, Recipes

Hello Lovelies! Yesterday my company, We Edit Podcasts, turned 2! So today I thought it only right to celebrate with a crazy sweet, chocolatey, peanut butter cheesecake! I can’t believe two years have gone by since starting my business, and I couldn’t be more excited about how it has grown. Although I prefer a healthy diet, amazing times like these call for a little extra sweet treat!!

Starting and growing a business is no small feat. It takes many long days, late nights, and plenty of hours of hard work to get it off the ground. You have to be able to make the sale, deliver a great product or service, and most importantly, add value into the lives of your clients. It is so important to always follow through, be consistent, and put in the hard work from the start to truly reap the rewards in the end.

Launching your business can seem like a mountain to climb, but it is all about setting milestones for yourself and celebrating each when you get there so you can look on to the future. When tough times come, there is no use in staying stuck where you are. Look forward, pivot, and make your next move! Most of all, value the dedication and work that you’ve put in because without you it wouldn’t have been possible. So don’t undervalue yourself, don’t sell yourself short, and always celebrate how far you’ve come!

Now on to that cheesecake! :D

All you’ll need is:

10 graham crackers
7 tablespoons of melted butter
24 ounces cream cheese (3 packs)
1½ cups powdered/icing sugar
1 teaspoon vanilla extract
1½ cups chocolate chips, melted
2 cups peanut butter, melted
1 cup confectioner’s/icing sugar

Crush the graham crackers, then melt the butter and add the two together to form the crust. Press the crust into the bottom of a springform pan and refrigerate. Mix the softened cream cheese in a large bowl, and add in the powdered sugar & vanilla, mix until smooth. Melt the chocolate and add to the cream cheese mixture. Pour mixture over the graham cracker crust using a spatula to smooth it out, and refrigerate.

Mix together the melted peanut butter and icing sugar and pour over the chocolate cheesecake layer. Use a knife to spread evenly and refrigerate for 2-4 hours. Top with your favorite toppings, and decorate it with some beautiful flowers :) Enjoy loves! How are you celebrating your big milestones? <3
