Hello Lovelies! Yesterday my company, We Edit Podcasts, turned 2! So today I thought it only right to celebrate with a crazy sweet, chocolatey, peanut butter cheesecake! I can’t believe two years have gone by since starting my business, and I couldn’t be more excited about how it has grown. Although I prefer a healthy diet, amazing times like these call for a little extra sweet treat!!

Starting and growing a business is no small feat. It takes many long days, late nights, and plenty of hours of hard work to get it off the ground. You have to be able to make the sale, deliver a great product or service, and most importantly, add value into the lives of your clients. It is so important to always follow through, be consistent, and put in the hard work from the start to truly reap the rewards in the end.

Launching your business can seem like a mountain to climb, but it is all about setting milestones for yourself and celebrating each when you get there so you can look on to the future. When tough times come, there is no use in staying stuck where you are. Look forward, pivot, and make your next move! Most of all, value the dedication and work that you’ve put in because without you it wouldn’t have been possible. So don’t undervalue yourself, don’t sell yourself short, and always celebrate how far you’ve come!

Now on to that cheesecake! :D

All you’ll need is:

10 graham crackers
7 tablespoons of melted butter
24 ounces cream cheese (3 packs)
1½ cups powdered/icing sugar
1 teaspoon vanilla extract
1½ cups chocolate chips, melted
2 cups peanut butter, melted
1 cup confectioner’s/icing sugar

Crush the graham crackers, then melt the butter and add the two together to form the crust. Press the crust into the bottom of a springform pan and refrigerate. Mix the softened cream cheese in a large bowl, and add in the powdered sugar & vanilla, mix until smooth. Melt the chocolate and add to the cream cheese mixture. Pour mixture over the graham cracker crust using a spatula to smooth it out, and refrigerate.

Mix together the melted peanut butter and icing sugar and pour over the chocolate cheesecake layer. Use a knife to spread evenly and refrigerate for 2-4 hours. Top with your favorite toppings, and decorate it with some beautiful flowers :) Enjoy loves! How are you celebrating your big milestones? <3

Eggplant Burger Recipe

Hello Lovelies! Today I thought I’d get a delicious recipe on the blog for you. These eggplant burgers are amazzzzing! As some of you may know, I love spending time in the kitchen trying out new recipes and getting some yummy meals on the table. I have cooked with eggplant quite a bit, usually for eggplant pasta or a Moussaka Greek dish (which is to die for!). I saw this recipe back when I was doing the Whole30 diet and thought it was a great option to carry into your regular eating, even after finishing the Whole30.

The trick with eggplant is to really get a nice roast on them. *Tip: heat the baking sheet in the oven ahead of time to give them an extra crisp. For this recipe I also made my own burger patties so that they would be small enough to fit on the eggplant rounds. Obviously it helps to buy the fat eggplants so that there is more “bun” to go around :)

1 eggplant
3 tablespoons of extra virgin olive oil (EVOO)
½ teaspoon salt
½ teaspoon pepper

Preheat the oven to 425°F and line a baking sheet with foil or parchment paper. Slice the eggplant evenly into quarter-inch-thick rounds and arrange in a single layer on the baking sheet.
Drizzle half of the olive oil evenly over the eggplant, then flip each slice and drizzle the remaining EVOO on the other side. Season with the salt and pepper.

Roast the eggplant in the oven for 20 minutes, until it is browned on the outside and tender when poked with a fork. Allow the eggplant to cool, then make your burger with all the fillings between two slices and serve.

Sushi Making, Birthday Party Fun!

Hello Lovelies! This amazing fun evening has finally found its way onto the blog :) Just a little throwback to I got together a group of ladies to celebrate the lovely Rachel’s birthday! We had an incredible time learning how to make sushi at Goro+Gun Japanese Noodlebar. It was such a fun idea, and the staff were absolutely great even with such a big group. We each got a plate filled with all the goodies to put in the different rolls. We got to make three different rolls per person, and then they took it away to style it oh so neat and tidy for us! It was delicious in the end, and we were all quite happy with our creations. Sushi-making is easy when you’ve got the professionals showing you how. Can’t wait to try it out again, or even give the homemade adventure another try! Enjoy lovelies and if you’re a sushi lover, definitely give this a try! <3

Breakfast Egg White Cups

Hello Lovelies! Today I’m sharing another delicious and easy recipe by BreeAnn Cox from Body by Bree. These delicious egg white cups are super easy to make, and so great to have ready for when you are on the go and need something healthy with all the goodies! It’s a great source of protein, especially for those days that you are running out the door. It is also the perfect idea as an hors d’oeuvre and presents beautifully. All you’ll need is 2 oz of organic ham, 1/3 cup bell peppers, 1/4 cup raw onion, 1 cup chopped baby spinach, 50 grams whole egg, and 4 oz 100% egg whites. Preheat the oven to 350 & spray a muffin tin with cooking spray of choice. Mix the egg & egg whites together. Add small amounts of each ingredient in every cup and fill 3/4 of the way. My Christmas Time Nespresso Moment

Hello lovelies! Since it is the festive season, thought I’d share with you all about this amazing limited edition Banana Bread Nespresso flavor. It is to die for! We only just recently dove into the Nespresso scene, and snagged ourselves the VertuoLine Nespresso Machine. For someone who doesn’t really prefer a strong cup of coffee, I was definitely hesitant. But thanks to Nespresso’s new recipes online I have been mastering a few specialty coffees, and kicking up my hostess skills. It’s been exceptionally cold these past few weeks, so coffee by the fireplace has definitely been my jam! I have to say I like to make it fancy, using the Nespresso milk frother to give it that specialty look. Then top it off with a dash of cinnamon and I couldn’t be happier. In winter time I definitely live for my Nespresso moments. The best conversations are shared over a cup of coffee, and it creates rich, priceless times together! So don’t hold back this Christmas season. Make time for those special moments together with friends and family <3
